I have become a big fan of rice bowls for this reason. Cook a batch of rice, add whatever protein is around, some vegetables, and a decent sauce, and suddenly leftovers stop feeling like leftovers.

People underestimate sauces too. A basic meal can feel completely different with curry sauce, salsa, garlic yogurt, or even just a good hot sauce. It is basically the lazy cook's secret weapon.

The only danger is calling everything a "quick meal" when there are seventeen ingredients and three pans involved. That is how a simple dinner turns into a kitchen adventure nobody signed up for :D

Breakfast for dinner deserves more respect than it gets. There are evenings where the idea of making a proper meal feels like a second job, and scrambled eggs with toast suddenly becomes the best invention ever made :)

Another easy one that works well is a big tray of roasted vegetables, chicken or sausages, and some kind of sauce. Throw it in the oven, forget about it for a while, and pretend you planned the whole thing.

The real trick seems to be having a few reliable meals that do not require much thinking. Fancy recipes are great, but Tuesday night is usually not the time to become a celebrity chef ;)

One vote here for pasta, especially the kind where the sauce comes together while the pasta cooks. A simple tomato sauce, pesto, or creamy garlic sauce can save a busy evening without much effort.

The best weeknight dinners are usually the ones that leave you enough energy to enjoy the rest of the night. Spending an hour cleaning up after a meal defeats the purpose a bit.

Also worth mentioning freezer meals. Making extra portions when you have time means future you gets a surprise gift on a day when everything goes wrong. Future you is usually very grateful ;)
