Somewhere in Greece is still at the top of the list for me.

Good food, warm evenings, little tavernas by the sea and enough history to wander around when you've had enough of the beach. That combination is hard to beat :).

Japan keeps creeping higher up my list every year.

Not exactly a typical sunshine holiday, but the mix of old temples, modern cities and amazing food looks like the sort of trip that sticks with you for years rather than just giving you a tan.
