A microwave oven works by generating electromagnetic waves that specifically target water molecules throughout your food, rather than heating the surface first and slowly conducting warmth inward the way a conventional oven does. Each water molecule carries a slight positive charge on one side and a slight negative charge on the other, making it what scientists call a dipole, similar to a tiny bar magnet with two opposite poles. As the oscillating electromagnetic field passes through the food billions of times per second, it forces these water molecules to flip back and forth trying to realign with the constantly shifting field, and that rapid, repeated flipping generates friction between molecules. That friction is what actually produces the heat, meaning every water molecule in the food effectively becomes its own tiny heater, working simultaneously throughout the entire dish rather than just at the surface.

This is exactly why foods with higher water content, like vegetables, tend to cook faster in a microwave than drier foods, and why a bowl of soup can appear to boil at the edges first, since those outer areas typically encounter the microwave energy before it fully penetrates toward the center.
